香菇烤鸡的制作

 

1、加工白条鸡：白条鸡在水中浸泡半小时，去掉浸出的血水。洗净后，用刀从体腔内向外扎一扎，注意不要扎破皮(目的是为了使鸡腌得均匀)。

2、制卤：八角50克、肉桂50克、山奈15克、草果35克、小茴香45克、砂仁20克、花椒20克、丁香5克、香叶3克、白芷5克、陈皮15克、桂皮40克、豆蔻30克、紫蔻30克、香菇15克、生姜50克、良姜30克等。调料用纱布包扎好。将清水25千克倒入锅内加盐4千克，再加调料包，煮沸后加味精0.1千克。然后倒入浸泡缸中冷却使用。

3、浸卤腌制：先将洗泡后的鸡体腔内灌满卤，然后叠放于浸泡缸内，上面覆压重物。夏季一般2～3个小时，春、秋季为6小时，冬季12小时。夏天热时若要加速鸡的腌制时间可在浸泡缸中加入适量磷酸盐、硝酸盐。

4、调料：淹制好的鸡膛内装葱l根、姜2片、香菇1块，料面少许(料面由上述调料磨成面再加入其重量的1／2味精而成)。

5、烤制：烤炉温度升至230℃放入鸡烤制。烤制过程要不断翻动，使鸡烤匀。1小时后，关闭烤炉，即可出炉。

☆ 特点：成品表面油亮金黄，香气诱人，皮脆肉嫩，风味胜过其它一般烧鸡、炸鸡。
